Chocolate Chili Truffles
1/2 Cup - Honey/Almond Granola
1 Cup (About 2) - Ripe Bananas
3/4 Cup - Chocolate Whey Protein
3/4 Cup - Coconut Flour
1/4 Tsp. - Cayenne Pepper
1 Tbsp. - Raw Cacao Nibs
1/2 Tsp. - Sea Salt
1/2 Cup - Unsweetened Coconut Milk
1 Cup - Chocolate Cookie Crumbs
2 Tbsp. - Coconut Oil
- Using a food processor or hand blender, puree bananas until no lumps remain.
- Place all ingredients except chocolate cookie crumbs in a large mixing bowl and mix until stiff, slightly wet dough is formed.
- Roll dough into small dollar sized balls and set aside on a cookie sheet.
- Place chocolate cookie crumbs into a large mixing bowl and toss the balls in the crumbs, 5-6 at a time to coat. Refrigerate until needed. Extras can be frozen for up to two weeks.
Yield: About two dozen balls.
