    Quinoa Breakfast Bars


    Ingredients:

    • 1 - Cup Whole Wheat Flour
    • 1 1/2 - Cups Cooked Quinoa
    • 2 - Cups Quick Oats
    • 3/4 - Cup Almonds (Chopped)
    • 2 - Tsp. Cinnamon
    • 3 - Tbsp. Ground Chia Seeds
    • 3 - Tbsp. Ground Flax Seeds
    • 1/2 - Cup Peanut Butter
    • 3/4 - Cup Honey
    • 1 - Whole Banana (Mashed)
    • Tsp. Vanilla Extract
    • 1/3 - Cup Dried Cranberries
    • 1 - Tsp. Baking Soda
    • 2 - Large Eggs


    Directions:

    1. Place all ingredients, except whole wheat flour, in a large mixing bowl. Stir together until all ingredients are thoroughly mixed and uniform in texture.
    2. Add in whole wheat flour and mix together just until combined.
    3. Spoon out onto a parchment lined baking sheet (9"/13") and firmly press down to flatten.
    4. Bake at 375 degrees for 15-20 minutes or until golden brown.
    5. Remove from oven and let cool for 20-30 minutes at room temperature.
    6. Once cool, transfer from baking sheet onto a large cutting board. Cut into small bars.
    7. Yield: 15-20 Small Breakfast Bars
